“Sapa” is a product of ancient origins, obtained of long cooking of grape juice over direct wood fire, until it is reduced to more than 2/3 of the initial volume, and in any case its duration shall not be less than 15 hours. While cooking in a steel cauldron, the must is skimmed periodically until required consistency is reached and until the full caramelization of sugars. Sapa has a dark brown color, a sweet taste and a slightly sour smell, pleasant and intense. It is a natural product that contains no dyes, preservatives and thickeners. For itssweet taste, is particularly suitable for “polenta”, cheeses, ice creams, fruits and desserts.
